Heliotrope is right!
Jerusalem artichokes are actually the tuber of a type of Sunflower. Greisole (Turns to the Sun). I grow sunflowers for the birds and squirrels.

I just love sunflowers. Other than roses, I don't think there's another flower
with nearly as many varieties. Plus, they're sunny and happy and fun in the way they turn with the sun (heliotrope, I think it is?). ~~CC
