Taiwan is often celebrated as the birthplace of bubble tea, also called boba tea, a globally popular drink that originated in the 1980s in Taichung. Bubble tea typically consists of sweetened tea—black, green, or even fruit-flavoued—mixed with milk or non-dairy alternatives and served with chewy tapioca pearls, known as “boba,” at the bottom. Over the years, inventive variations have emerged, incorporating flavours like taro, matcha, brown sugar, and even cheese foam. The appeal lies not just in the taste but in the texture contrast—the creamy, flavorful liquid combined with the gummy pearls creates a playful drinking experience. Bubble tea has become more than a beverage; it’s a cultural icon of Taiwan, representing innovation, fun, and the island’s dynamic street-food culture. Another cornerstone of Taiwanese cuisine is beef noodle soup, a hearty and savory dish beloved across the island. The dish typically features tender chunks of beef, sometimes with bone marrow, simmered in a rich, spiced broth infused with soy sauce, ginger, garlic, star anise, and other aromatics.
