Poseidon produced a spring; Athena produced an olive tree. Athenians chose the olive tree and the goddess became the ruler of the city that carries her name.
Aside from its history, the silvery green tree is beautiful, particularly when its white blooms open up, ready for pollination...thus starting the process of olive production.
